Save Money and Calories in December!

The holiday season is upon is.  Along with the day-to-day stress of our everyday life, we now have more responsibilities on our plate, such as gift shopping, sending holiday cards, planning parties, and keeping warm!

With all of these extra activities, it's easy to lose sight of caring for ourselves.  Since we are already going to be spending money on gifts, and eating calorie-laden treats at numerous parties and holiday gatherings, it's a practical idea to prepare dinner at home as much as possible during the month of December.

"But Jodi!", you say, "It's cold outside!  I have to put in extra hours at work to compensate for the vacation days I will be taking soon!  When I come home, the last thing I want to do is cook dinner!"

I hear you.  I have had my share of evenings where pizza and burgers became a cop-out for making my own dinner.  I am certainly not an accomplished chef by any means, but I do have a few simple meals in my bag of tricks.  So today, I am going to share one of my easy dinners with you - and I encourage you to share your favorites with our readers.

A favorite Monday night supper for me is "Breakfast for Dinner".  I make a bowl of oatmeal and an omelet.  Both of these items are quick to prepare, and they are warm and satisfying.  The other thing I like about these two foods is how versatile they are.  Sometimes I put cinnamon sugar in my oatmeal, other times raisins or bananas.  My omelets can be meat and cheese, or veggies and herbs.  I use whatever ingredients I have in the refrigerator and pantry, and clean-up is a breeze.
